This one has been my go-to recipe for care meals (families with new babies, illnesses, etc). It is so easy, and although no meatloaf is fast-cooking, it's something you can throw together the day before and cook when you have an hour to spare (with minimal babysitting!). Also, meatloaf in general owes someone a thank you. I've seen meatloaf haters turn into meatloaf lovers because of this version.
Ingredients:
1 lb lean ground beef
1/2 lb Italian sausage (mild or medium, pick your heat)
1 finely chopped onion (I use sweet yellow onions)
2 large peppers, red or green, coarsely chopped
1 egg
1 can roasted tomatoes (drained)
1 tsp mustard powder
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp oregano
Pinches of salt and black ground pepper
Italian breadcrumbs (1-2 cups, depending on how wet you like your meatloaf)
Marinara or pizza sauce
Parmesan cheese (or Mozzarella, whatever you have on hand).
Directions:
In a large bowl, mix everything (with your hands) except for the marinara sauce and Parmesan cheese. Eye the wetness of it and add more breadcrumbs if you feel that it is too wet (the tomatoes and Italian sausage can do that to it). Transfer to a 8 X 10 loaf pan and cook covered for 1 hour at 375. After 50 minutes, pull back the foil and top with the marinara or pizza sauce and cheese, then cook uncovered until finished.
For a lighter version, substitute ground turkey for the beef.

Yay! Thanks for joining the party! :) I can attest to this recipe... mike and I usually do not like meatloaf AT ALL, but we enjoyed yours!!
